Vegetarian Rice Casserole

Vegetarian Rice Casserole 1/4 Cup oil 1 Onion 1 large carrot 1 cup shredded cabbage or broccoli Handful of green beans and peas boiling salted water 1 cub shredded spinach leaves 1 cup shredded lettuce or mushrooms 15 oz can bean sprouts - or freshly sprouted is best 1 Tablespoon soy sauce 2 Tablespoons sesame seeds 1/2 cup finely chopped walnuts Sea salt to taste 1 cup brown rice 2 eggs Method: Cook rice in boiling water, drain and add briefly cooked beans, or peas ( or both) Heat oil and saute chopped onion and chopped carrot and cook until onion is tender. Add cabbage, beans, spinach and lettuce ( or mushrooms) Cook covered without added liquid until wilted. Add drained bean sprouts, sesame seeds, walnuts, salt and soy sauce. Cover and steam 3 minutes. Mix in the rice, toss lightly, reheat gently. Make a well in the center of vegetable mixture and add lightly beaten eggs. Cook, stirring, until eggs are cooked. Serves 4 - 6 This meal tastes delicious

Recipe for quick and easy Red Pepper Salad

This is one of the quickest and tastiest salads and if you use all the different colored peppers, yellow, red, orange and green and serve in a glass dish it can look magnificent. How to: Grill or BBQ the peppers until the skin turns black Place in a bag or bowl to steam through enough to make the skin easy to remove. Slice the peppers Add salt and pepper to taste, Sprinkle Olive oil ( or avocado oil is nice too) and vinegar ( I use cider vinegar) Serve with herbs of your choice, spring onions etc

Kumara and Semolina Patties

Kumara and Semolina Patties Cook together 1 Kumara ( sweet potato)and 1 Potato - medium size and mash Chop a bunch of parsley and several spring onions finely cut or chopped 3 - 5 capfuls of Shoyu or Tamari Semolina to mix Mashed Tofu (couple of slices - optional but nice) Mix and mold into patties. Roll in Semolina and cook in frypan This is great with Tamarillo Salsa, (recipe on this site) or fruit chutney Photo shows without parsley and spring onions as we had some great kumaras and no parsley or spring onions that had not gone to seed !
